Located on the hills around Bolsena
Our olive groves are located on the hills around Bolsena Lake. They are nestled in a microclimate to the East of the Lake and to the west where the height of the hills and woodlands protect the plants from the harsh winds from the lake.
Canino, Leccino, Frantoio, Moraiolo
The most represented cultivar is certainly the Canino, the queen of the cultivars of Tuscia contributing to 70% of the plants, followed by Leccino for 20% while smaller holds are Frantoio with 5% and Moraiolo also at 5%.
Canino Cultivar
Although it is a self-sterile cultivar (in the sense that it needs to have plants that act as pollinators) thus we are faced with an anomaly because two of our century old olive groves Ex-Giovannino and Ex set-aside do not have olive trees that act as pollinators. Therefore, the idea of creating brand is highly appreciated and was born last year due to its demand.
This resulted in an intense, fruity-green oil with an aromatic profile characterized by hints of freshly cut grass, artichoke with a hint of almond.
The high content of polyphenols, especially when harvested prematurely, makes this oil well preserved overtime and the fatty-acid content remains balanced.
Leccino Cultivar
Also, for this variety, we are faced with self-sterile typology for which it must be associated with other varieties as pollinators. In our case, the Leccino olive grove is referred to as ‘The Olive Grove under the House’. It is made up of 94% Leccino plants, 2% Canino and 2% Pendolino. It is a relatively young olive grove approximately 30 years to date.
This type of cultivar ripens very early and in fact, we hurry to finish the harvest within the first few days in October before the fruit ripens. The oil that comes from sacrificing the yield is a ripe fruity and nutty taste but still maintains the polyphenol content compared to the Caninese.
Frantoio Cultivar
This form of cultivar has a very low percentage so it’s just a pollinator. It has a late ripening as well as a high quality of polyphenols resulting in an intense green and fruity aromatic herb infusion.
Moraiolo Cultivar
Also, it is a self-sterile variety that resists and repels flies but suffers a lot from the temperature changes. The oil that is produced is a green fruity taste with a hint of artichoke, cut grass and tomatoes.
Our Organic BorgOlio
Our BorgOlio is an organic extra virgin olive oil mixed with a blend of Canino, Leccino, Frantoio and Moavolo cultivators. The cold-pressing method takes place within 12-hourws of harvesting the olives which come exclusively from our fields.
Early harvest, fertilization based on algae, location of the fields in the caldera of the ancient volcano: choices and opportunities that give life to a unique product.
