Exclusively and Entirely Organic
Podernovo Village is an organic farm on the shores of Bolsena Lake, with over 100 years of experience in growing olive, ancient grains and legumes. We have chosen co-sustainability thus prioritizing quality over quantity.
Our main product is BorgOlio, a high-quality extra virgin olive oil available yearly. However, Ancient grains and pulses are seasonal offering different varieties and quantities every year. We produce our flour, pasta and pulses for those who choose a genuinely healthy diet, without the use of chemicals and preservatives.

Oil with perfect harmony, with the environment with its pleasant, medium tone fruitiness that offers fresh notes of wild herbs and flowers. To the palate, it hosts a particular essence of bitter almond, artichoke hearts, thistle and nettle create a balanced finish with a subtle spice that's not at all sharp.

BorgoFarina: our Flour
Our flour is obtained by stone grinding; ancient soft grains selected on the basis of an organic table by the University of Bologna. They have the characteristics of having a low glycemic index and high nutritional value deriving from the mild refinement.
We sow only ‘ancient’ species which means, seeds that are not hybridized or genetically modified and was selected before the mass industrialization of processed foods after World War II.
BorgoFarina: our Flour

Ours is a small niche production therefore we cannot guarantee the same quality and continuity, but this is what makes the artisan secret of the BorgoPasta’s success.

These organic lentils, chickpeas and pulses of ancient civilization are known for being rich in fiber, vegetable proteins, vitamins and minerals due the rich soil that dominates the area due to the large volcanic, crater Bolsena lake.

When is the best time to buy from Borgo Podernovo?
Due to the seasonal and organic production of Borgo Podernovo produce they need to be bought at the time of production as supplies tens to run out. Please find below the calendar ideal for purchase:

- BorgoFarina: during August and September
- BorgoPasta: September until supplies last
- BorgoLegume: from August to September

Overlooking Bolsena Lake.
Borgo Podernovo is a fascinating agricultural family-owned farm known for its rich ancient history and for the idyllic demographic position in which its located.
Since the early 1900’s the property has belonged to the Malvolti family thanks to a generous bequest from a noble from Orvieto. The founder, Luigi Malvolti began his business adventures by creating a real ‘Autonomous Village’, populated by many families of the ‘Sharecroppers’ who shared work and tasks with the owner. The farmhouses (recently converted into an Agritourism), are a beautiful testimony to the bon that was created and to which a vivid memory remains until today from who lived and experienced this land first handedly.

The lands of the Village slope down from hills to Bolsena Lake where the farmhouses majestically overlook the largest volcanic lake in Europe. This offers a unique experience, relaxation with unforgettable smells and colours.
All apartments are built out of local volcanic stone therefore the space remains cool in the summer and warm in the winter making it a wonderful holiday retreat. We offer a variety of different sized lodges from the studio to the largest apartment that can accommodate 9 people.
